So when Pixar shared the original recipe on their Twitter account I knew I had to recreate them at home. Now whenever I’m craving one I just have to pull this recipe up and voila I’m set! Grab the list of ingredients below. You can find my cute Mickey shaped bowls here online.
- 1 cup butter (2 sticks)
- 1 1/4 cup brown sugar
- 1/4 cup sugar
- 1 egg
- 1 yolk
- 1 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 2 1/4 cups flour
- 1 cup chocolate chips
Let’s get started
First thing you need to do is brown the butter. I had never browned butter before. So I just googled how to brown butter. You melt butter in a pan on medium heat. It will start to bubble and then get foamy around the edges.
Continually stir and after about 5 minutes it will all foam over. Then it quickly changes to brown in the bottom of the pan and you smell a nutty delicious aroma. Immediately remove the butter from the heat before it burns and turns black. This is what it should look like.
Now let the butter cool in the mixing bowl until it begins to solidify. While the butter is cooling if you don’t have the bigger cupcake liners don’t worry. Here’s a great tip. You can turn regular cupcake liners into bigger ones. Wash your hands real good. Now just take the liner and stretch it out starting from the bottom until you reach your desired size. Here is the link for these similar cupcake liners in red.
Once the butter is cool, cream together the butter, sugars and salt in a mixing bowl until light and fluffy.
Mix in the whole egg, egg yolk and vanilla.
Combine the dry ingredients and mix into the batter well.
Lastly add the chocolate chips.
Now scoop 2 balls into each cookie liner and smash down. I also added some more chocolate chips to the top of each cookie, cause why not?!
Chill the dough at least an hour, preferably overnight.
Bake at 350 degrees for 9-11 minutes until golden brown on the edges but still soft in the center.
Now are you ready to take this cookie to the next level. Add ice cream to the hot cookie after it comes out of the oven. Add two scoops of ice cream and voila you’ve got a whole new treat! We loved the ice cream addition!
